I'm looking to get some replacement brakes dics for a friend for his E46 320ci cab.

Firstly I am assuming it is a relatively easy DIY job to swap the front discs?

Secondly, where would be the best place to buy them from? I have no idea who are decent BMW parts suppliers...

You should be able to et some plain OE spec bremob discs from German and Sedish or maybe Euro car Parts for ATE

Easy job to change. Pads out, Calipers of, remove the allen screw holding the disc on. May need to tap the disc with soft faced mallet to get it of. Assembly is reverse push back pistons and bolt it all together etc. May need to syphon out some brake fluid. Oh yes be careful of the wear sensor (on one side only) ease it out and ease it back in. If your wear light is on you will need a new sensor.

I always use OE discs from the dealer.
