Lamb Chops - how to cook?

It's lamb chops for dinner tonight, they're not huge and cut about an inch thick.
Any tips on best way to cook them so that the fat is nice and crispy but meat still pink?

Fat rendered in a pan and 5 mins in the oven and they were lovely - forgot to take a pic though frown

Sorry, I'm a bit late for last night but next time try this.

Season both sides with salt and pepper and put into a hot pan fat edge down until the fat is nicely browned.

Seal on one side then turn over, generously spread the sealed top side with Dijon Mustard then generously sprinkle with Brown Sugar, put under a hot grill until the sugar and mustard goes dark, sticky and a bit crunchy.

Serve and don't forget to scrape all the gnarly, greasy bits out of the pan for yourself.

Eat and enjoy...........Nom, Nom!!

BBQ full pelt, hold each chop on end to start working on the fat, then lower and sear each side. Then indirect heat for about 15 mins turning half way.

My local Indian does tandoori lamb chops. I live in a house with a vegan and a veggie, so meat is hard to come by. But these.... every time!

I just remembered that I did some lamb chops the same way a week or so ago and used Mint jelly with Dijon Mustard, it worked but a lot of the glaze melted off the chops and into the pan so it ended up as a sort of sauce, it didn't matter though as it was really tasty and it got wife approval.

I usually cut the "tail" pieces off and cook those first till crispy. Then as others say, fat down till browned and then quick sear of both sides.

Sear 1st, then cover in a dish in 200c oven with a touch of wine/water for 45miins to 'steam' the meat will be well done but it will be melt in the mouth and juicy everytime
