How can you tell if a pump and cambelt have been changed?
Discussion
1) Ask if you can watch it being fitted. Bonus points if you can inspect the part first to make sure that it's brand new, undamaged and an OEM rather than pattern part., and if you can offer the technician any helpful advice about how to fit it properly. Obviously it will be necessary to maintain a safe distance, not for the risk of virus transmission more for the safety of avoiding hurled spanners.
2) Ask for a copy of the internal invoice so you can demonstrate that the work has been done when you come to sell the car.
3) Tell them not to bother, and ask to reduce the price of the car by some or all of the cost of doing the repair yourself / somewhere else.
Just out of interest, is charging for work that hasn;t been done something that happens in the business that you work in?

Number 3.
Price reduction and do it yourself. You can then replace not only the belt and pump but any other associated parts like the axillary belt. Give the cooling system a flush out as well when the pump is off/hoses disconnected and refill with longlife antifreeze.
The car sales will only have the bare minimum done with the cheapest of parts..
