That only makes sense if your 'bespoke map' is actually a choice between two pre-existing maps and not actually tailored to your engine.

If the map was developed for your car there would be no need to choose between two alternatives since the mapper could simply choose the best parts of both.

I suppose it's possible the preferred final map had less timing / more fuel for safety reasons, but that's not the reason you said.
