I know a lot of people do this..

My pc is at the other end of the house to the TV (55 inch LG oled). TV has ethernet via power line adaptor good enough for 4k streaming. Shame it doesn't run the steam software..

I could physically shift the pc to play or use something like an nvidia shield?

And if so what controller, I liked the xbox 360 so guessing an xbox one controller and USB dongle for bt would work (with the shield?) ?

See if you could find a steam link somewhere?

My Steam link let's me access the desktop on my PC, minimise big picture mode and I can start anything else on there.

Looks like the physical box won't do it but the new app will provided your network and PC are up to the task. Seems like it still works the same way for accessing your desktop though:

When I did this, the input lag was awful - although this was a year or two ago. When you try it let me know its improved

Isn’t there some kind of DP and KVM all over LAN type thing you could run?

I’m pretty sure you could run it lag free that way. Though obviously limited to KVM... not sure on BT and IR or whatever else.

Maybe with appropriate kit a Thunderbolt/USB (best one) connection is possible to carry all the data?

I’m building a silent Hdplex PC to “do it all” and it can sit with the telly.

No issues then with Xbox controller on BT, or plugging a wire in for charging, or IR via a flirc.
Or whatever else might need quick/convenient physical access.

Plus it’s then there for DVB T/S recording and all that jazz.
