VED as stated above is not relevant for insurance but if he's driving through a port without VED paid and the car still on a SORN, he has a very high chance of getting pulled or a ticket. Ports are monitored very closely for stolen cars and anything that draws attention to a vehicle will be used as an excuse for a pull and inspection.

I've never had cause to check, but my impression was that normally UK car insurance didn't cover long periods abroad. For example admiral say they cover 90 days in Europe.
I doubt whether the insurance abroad is specifically predicated on having UK VED in place. However according to the gov website, you need to have tax and insurance for your UK car whilst in Europe.

It's amazing how often people come out with 'insurance void' if a car is untaxed. It's rubbish. You're legally allowed to drive an untaxed or car registered SORN to and from a pre-booked MoT test centre. And there's no limit on how far either....
However, entering a ferry terminal from abroad to then drive to one would probably be considered taking the p***.

In the days of tax discs, it was the responsibility of the driver because there a visual check.
