Help choosing next open world game

I'm looking to get a new open world game for my XBox one X and I could do with some recommendations. I think I have narrowed it down to Witcher 3 or Red Dead Redemption 2. I would be grateful of any other recommendations.
In terms of games that I really like:
Skyrim Elder Scroll - I love exploring the open world and stumbling across side quests. I also like the range of weapons and magic skills available. I like the breathtaking scenery (albeit with early graphics) and I do like finding the giants and other monsters but this isn't essential. I've done this game to death though so I'm not tempted to get the remastered version!
FarCry 3, 4, 5 - Again, I like deviating from the missions to explore the map and I like stalking/hunting animals to get skins for upgrades. I enjoy developing the character and unlocking skill and weapon upgrades.
I like the ability to dive into a game for a spare 30 minutes to just mess around and explore rather than having to stick to rigid missions. I don't like things like the COD story mode games where you get endless waves of enemies firing from all directions.
I have seen a couple of clips of people exploring in RDR2 but they seem to be riding a horse through vast swathes of forests of empty fields without much really happening. Is it not like Skyrim where you would keep stumbling across caves/burial grounds/huts, etc?

Any other Fallout fine, but not F76!I'd stick to Witcher 3, and maybe something like Divinity Original Sin 2 (both of which I've finished, unlike F76 which I gave up after about 40 hours - of mostly crashing, restarting, losing progress - on the PC).

According to my game folder, it's been over a year ago now (April 2019), but not sure if I can be bothered putting any more effort into it.Feel the same way over No Man's Sky - despite all the work that's gone into that to improve it over the years.

True.ETA, it's only a 70GB/30 minute download, so I'll start it up again to see - but I'll have to go from the start again as I don't have any uncorrupted save games to go back to.

Currently enjoying that at the moment, I think it is a good one to dip in and out of. I'd prefer a few more consequences to the way you play but there is plenty to do and it doesn't make it hard work. Some nice historical bits in there too, and orgies with goats.Witcher 3 I found far too dialog heavy, personally. Very slow going.

Just started playing AC:O a couple weeks ago on the PC. Great fun and it looks absolutely incredible, too.
