First time visiting this section of the forums...
Getting married in slightly under 7 weeks (f me does it come up quick) & the wife to be has just suggested getting me a watch as her wedding gift to me. Now I know nothing about watches, hence the visit to this area...
Budget is absolute max £2k & I'd like something classy, rectangle-ish face and wouldn't mind a bit of blue included. Has to be a metallic strap, not a fan of leather at all.
Currently have a Citizen & a Hugo Boss,


but like the look of this - never ventured into this level of watch so really needing a steer PH?!

Longines do a nice tonneau shaped watch called the Evidenza. Classy, understated and available in leather or metal straps (and inside budget).
You could also try taking a look at Oris - again some nice watches in budget.
For something a little unusual try looking at Mühle Glashutte. Beautifully made and a bargain for what they are.

Does it have to be new?
What you're describing is a JLC Reverso. You should be able to pick up a pre-owned one on leather for £2K. Sadly the new price is much, much more, but that means you get a lot of watch for your money. Most (the classic) have a white face, black numerals with blued hands.
The vast majority of watches fitted with leather straps can be easily fitted with a steel bracelet. So you should not let this sway your decision.
A lot of people have hangups about a second hand watch. It's presonal choice but I don't understand it. They're usually happy buying a second hand car & house. Change the strap for a new one, a quick clean of the head and you're away. Many second hand watches are indistinguishable from new anyway.

You mentioned the Longines HydroConquest. The newer ones with the ceramic bezel are really rather lovely. Their chronograph uses a column wheel movement, if you’re interested in that kind of thing, and is a bit of a steal at its pricepoint.
If you’re interested in the HydroConquest but aren’t in need of the dive bezel, their Conquest range is pretty classy. Very much a Rolex Explorer 1 vibe but at a sensible price.

I thought I wanted a rectangular/square face but I think I'm just pretty fond of the Boss watch I already have, despite it being sub £200.
Was also looking at the Rado Hyperchrome but feel it's slightly too wide for my arm & to be honest prefer the Longines Record. The hunt continues.

I'd recommend getting yourself to the nearest shopping/town/city centre and spend a couple of hours or so browsing and trying a few on, you'll soon work out what you do and don't like when the actual watch is on your wrist. Stores are usually very accomodating, there's nothing like getting your hands on the item to narrow your focus and, in my experience, no hard sell by the retailers either.
Figure on a 10-15% discount as well, don't be shy in asking about a deal.
Late edit - a great point made above about pre-owned watches, most of my collection weren't new to me and I've never had any second thoughts over it.

Still no further to finding ‘the’ watch yet. Any idea what this one is? Matt Tebutt from Saturday Kitchen was wearing it yesterday. Would like to see it in better detail mind you, the bezel looks a bit on the chunky side and would need a stainless bracelet. Could also be nothing like what I’m looking for..
