It's taken a few tweeks over the years but recon I've cracked an exciting variant on our humble lasagne. . . . 

  1. Roast a butternut squash and let cool then mash it up
  1. Make a spag bol sauce and add a grated carrot ( even though you may already use chopped carrot), big bag of spinach and spice up with chillies to suit your taste. Let is cool
  1. Make your layers as normal in your oven dish with your sheets of pasta and mixture and on each layer add ripped pieces of Mozzarella
  1. On top finish with your last sauce mix and top with your squash mash and push in random amounts of more Mozzarella
  1. In hot oven for 40mins. . . it's to die for lads

I assume the meat is in the normal sauce bit?

So layers go:
Meat
Pasta
White sauce (+ mozzarella)
Meat
Pasta
White Sauce (+ mozzarella)
Mashed butternut squash

Sound right? + as many layers as people prefer...

Tasty and made a nice change but not sure the ricotta brought much to the party. Made a double batch of the ragu for tagliatelle another day

I spent £80 cooking a lasagne once. It was the tits. Didn't contain butternut squash.

It's on the BBC Good Food app which doesn't appear to let me share a link. There are lots of interesting lasagne recipes on there as it happens.

Thanks OP - I will be trying this recipe.

If you do want to leave out the meat, I have made this one several times now and it's really good. I halve the quantities, and it's still enough for several servings.

Hairy Bikers have a good one. You use aubergine's instead of pasta, and greek yoghurt for the white sauce.

Good to look up if you're on a diet, or allergic to gluten.

Should have said - I also include some aubergine with the roasted veg.

That’s because it is moussaka but substituting beef mince for lamb mince

Yeah, it does end up like that. But there's enough about it to make it look a bit like an Italian on a Greek holiday kinda thing.

No white sauce and yes meat is in the normal sauce bit ( sorry)
