Not a VW but....

On our Mini Car play works via Bluetooth from the phone that's paired with it. On the US Ford I rented it needed to plugged into the USB via a (proper Apple) cable.

Good luck!

Wireless CarPlay on mk8 Golf as far as I know. Pair it up and it'll just work when the phone is in the car. As long as your phone does wireless charging too then just drop it on the pad and it'll fill up too.

Cable connection is via USB-C socket, so not a "normal" rectangular USB plug, unless you're using a recent Mac and have a USB-C cable for charging your phone you'll need a new one. Not really any pressing need to though unless you really want a faster charge than wireless.

Why do you want a SIM? Just use your phone for nav via Google maps - includes traffic

Interesting, I thought they required to be plugged in.

My Wife has a (2019) Audi Q2 that connects to the phone for the usual phone/music etc. but requires the phone to be plugged in for carplay which, in day to day life is too much of a faff so it never gets used - very poor integration IMO.

Sometimes I long for the old days of my AX GT. Nothing fancy to distract you with it.

And CarPlay? Cable or SIM?
