Best VR Racing Game for Learning Tracks

For UK stuff, most likely Project cars 1 &2, Assetto Corsa is my preferred game but a lot of tracks will be third party mods and you're at the will of the map maker as to accuracy.
I don't have experience of the other usual sims, iRacing etc so unsure about what content they have but the above can be good for learning tracks (though never rely on what you've learnt in a game for obvious reasons!)

rFactor 2 and iRacing are the two best sims. Both have full VR support and laser scanned tracks, plus a wide vareity of car types. iRacing is the more expensive of the two. rF2 has a lot of 3rd party addons for cars and tracks that can vary in quality.
Assetto Corsa Competizione comes close, but has a limited amount of tracks, only GT3 and GT4 cars and but be warned thatl even powerfull computers can struggle in VR with it.
Project Cars is a game rather than a sim. Its better than nothing if your just learning tracks. But I'd chose Assetto Corsa over it any day as it can be had for cheap on steam and has loads of 3rd party addons, and its just better. Currently less than £4 on steam:
