Might be worth finding a swim coach; they can assess what is actually going on with your stroke, break it down, make corrections and rebuild it. If you're around London, there is a coach in Canary Wharf that a couple of people I used to swim with used and it made a massive difference for them.I’m struggling to get below 2:10/100m over 1600m.

Just an idea, works for some and not for others, try breathing on an odd number of strokes, 5 if possible, 3 if required. That way you turn you head to different sides with each breath, which for some people, whilst it can feel odd at first, can eventully reduce fatigue. Also, try not having your fingers closed tightly together, but slightly apart with a small, couple of mm gap, in between. Sounds counter intuitive, but it makes little difference to the pull on the stroke but can again be less tiring over a distance.
