I need to connect a camera to a projector for a live demonstration.

Can it be done using an iPhone or is it better to get a webcam?

Is it possible to do this wirelessly or will I need to connect the phone/camera direct to the projector or via a laptop?

The projector will most probably be suspended from the ceiling if that makes a difference. It’s an Epson EB-S41.

You can probably guess I have no idea about this! Give me a shelf to put up or flat pack furniture and I’m good to go but tech stuff is a little beyond me.

Thanks

You could do it with an iPhone screen mirroring but I’ve only done this with an Apple TV between the 2

If you have a laptop, plug that in and then use apowermirror (free) to wirelessly project iPhone/iPad to the laptop screen (and projector). It's a brilliant piece of software; I've rolled it out across the school I work at and even the most IT illiterate members of staff can use it.
