Which puff pastry for Beef Wellington

What brand and type of puff pastry do I need for a Beef Wellington. I recently used the frozen all butter sheets from Waitrose and one sheet is nowhere close to big enough so I had to join two together - which I don't think I did a very good job of.
Should I be looking to improving my sheet joining technique - if so, how?
Or, should I be looking at a different product - maybe blocks which I roll out myself? If one block isn't big enough, can I just stack two and then roll? Is there anywhere where you can buy much bigger puff pastry sheets?
As you may be able to tell, pastry is not my forte.

All the retail pre-rolled stuff looks to be similar size, best bet would be a 500g block of Jus-Rol.
You can't really combine two premade blocks so one sheet underneath and one over the top?
Or, if you have the time you could always make your own, it is a faff but not difficult if you have a day spare!
