Has anyone ever managed to cook a chicken kiev that kept all of the butter inside ?

I've tried many times over the years with both home made and shop bought, I've followed recipes and cooking instructions to the letter but invariably the butter leaks out as the chicken cooks.

I've never produced one like it is in the photos where the chicken is cooked through but the garlic butter stays inside until the chicken is cut.

Is it just me ?

Never done it either. I just cook the kiev on their own tray in the oven and pour the hot garlic butter back over the top of the kiev once its on the plate.

I’ve not made Kievs before, but when making stuffed chicken breasts of other varieties I’ve found that a chicken plug helps keep everything inside. Just cut a small piece off before getting started and then use it to plug the hole. Cooks in place and makes a pretty good seal.

It's not just you, I've never managed it either.

Last time I tried sticking the edges together with a flour and water paste - it didn't work.

Two other things I haven't tried: Meat glue (£9 on Amazon), Freezing the butter & garlic mix (not sure how this would impact the cooking of the inside of the cavity).

Make the garlic butter in advance and put it in the freezer for a couple of hours before you stuff the chicken.

How do you cook them? The best way is to fry them.

A real pain when it leaks. I use plenty of egg wash and double coat with crumbs.

If I buy Kiev (never make it!)

Then I put it on some foil on a baking tray and put my chips in with it.

Then the chips get coated in lovely garlic buttery goodness also.

I've done it successfully. I used a narrow sharp knife on the thick end of the fillet then made a pocket by poking my finger in it. push the small fillet bit that comes off the bottom. Pan fry then finish in the oven Don't overcook or the butter will ooze out.

place kievs on a slice of bread and enjoy garlic bread with your meal...

Make a foil dwelling in which the kievs can reside. Evict once cooked. Pour the captured oozings over now homeless kievs.
