Could be all manner of different things.
You really need to get it read for fault codes, but my guesses at this time are (could one or a combination of all of these);
Faulty MAF sensor
Faulty MAP sensor
Sooted up / sticky VNT mechanism on the turbo
Faulty vacuum pipework to the VNT mechanism
Faulty solenoids to the VNT mech
Weak / faulty fuel pump(s) note there are six of them, in tank lift pump, tandem pump, then the x4 injectors, which are pumps
Clogged fuel filter
Faulty throttle sensor (built into the pedal)
Get it read for fault codes first otherwise it will be a very expensive guessing game.
