So I'm doing an early Christmas lunch tomorrow because it's the last time I'll see my Mum before Christmas.

Same thing happened last year, and I followed Jamie Oliver's recipes on Youtube. I am absolutely useless at cooking but followed the instructions, and it turned out absolutely amazing. Seems to be all about the gravy and stuffing, but the turkey and potatoes cooking techniques are also crucial.

Anyone else got any tips, preferences or resources?

I think you are fine with Jamie, especially if you have done them before and are familiar with them.

He does tend to make very tasty food, but also with a focus on ease of cooking and not making things too fussy

Yes, Jamie is as good as anyone for home cooks, even though he is a chef. Ramsay can be very technical, Delia is great but her food is so rich. Not a fan of Nigella.

I'm having to do a veggie Christmas this year as I'm the only meat eater (doesn't bother me, honest) and for the first time ever I'm doing a proper veggie gravy from scratch. I had a go last week and used a Hugh Fearnly Whittingstall recipe from YouTube (I think it's the first result for vegan gravy). I was amazed at how nice it was! Gravy had always been the big downside for veggie dinner but that has solved that.

Beyond that, I'm doing Jamie roasties, glazed carrots, parsnips and creamed spinach and also his stuffing. All from his Christmas book, all tried and tested. Then the other things are just my own, run of the mill recipes.

OP: good luck with your lunch, and stick to what you know.
It's not the time, on the day, to try new, potentially fussy stuff, if what you've done before was perfectly good.
