OK.. so i've adjusted the Clutch and Brake easily with the threaded bar (imperial 11/16ths locknuts !) but I can't fathom the accellerator pedal.. theres the pivot bolt in the middle, and the top is the securely fixed cable end assembly.. which bit moves as neither seem to be on any type of "slotted" arrangement..?

The pivot point is adjustable on those cars that have the adjustable pivot point. Those that don't often have slack cables and playing with the cable can help. Some even don't open to full throttle on full depression.
As fo using stilsons... not really recommended cos of medal fatigue, The pedal can break with too much welly.

The adjustment is at the engine end! The outer ends in a threaded sleeve which is clamped to the throttle assembly by a couple of locking nuts. Simply slacken off the nuts and tighten up further down the sleeve to move the outer towards or away from the throttle assembly, this moves the pedal down or up the corresponding amount. Beware of raising the pedal too far if you do this, since it makes the cable kink at full travel and shortens the cable life considerably unless you reroute the cable through the bulkhead. Physically bending the pedal is the alternative, but if you try this with it on the car you'll end up hurting something.

If my Accelerator pedal is standard they dont adjust.
But a large Stilson and some brute force did the trick for me. Cheaper than the Leven pedal set.
If you have an adjustable end-stop, make sure you adjust this as well, so that you don't either stretch the cable at full travel, or stop the pedal before you've reached full throttle. (You need 2 people to do this properly, so that you can have someone pressing the pedal, while the other looks at the other end of the throttle cable)
