ww2 roll of honour confusion

When places like churches and such display a rememberance roll of honour I always assumed these were for those who died in the war, but while searching for something else I saw my grans name on one of these roll of honour plaques in a church amonngst others who had died in the war, but my gran survived and thrived until the late 2000s
Are these more just to regognise people who served, or did someone get the wrong end of the stick and assumed she died in the war?
She enlisted in the womens auxiliary air force for a bit of adventure and was stationed in Egypt as a radio engineer, but she married an Egyptian and liked Egypt so she remained there until the late 50s until there was a muslim uprising and a lot of their friends and neighbours were killed so they escaped to Scotland.
Did someone in her Ulster village just assume because she never came home that she died out there and stuck her on the roll of honour or are the roll of honour plaques more just for service?
I have emailled the church the plaque is at but haven't had a reply yet.
