Ashes to Ashes and Life on Mars. Breaking Bad. Boardwalk Empire and I'm sure I'll feel the same way about Vikings when I get to the end. Oh, and Banshee. And of course The Sopranos.
Wished they'd finished sooner?
Hard to say, Homeland I guess. Stopped after the first couple of seasons. Never watched Lost but gathered that got daft. And Twin Peaks the same.
If something is rubbish or doesn't hold my attention, then I ditch it.

Pretty much any US sitcom goes on beyond its natural time. Cheers, Big Bang Theory, Frasier, Friends, Sex and the City etc all should have been a few series shorter.

Too soon:
The Bridge: I nearly didn't get past Episode 4 of this as I found Saga hugely annoying in the first few episodes, but once I got over that it was hugely compelling viewing. It definitely has / had a few more seasons in it
Too long:
The Sopranos. It saddens me to say this but it's true. Without seasons 5 and 6 it would be in my all time top 2. Just didn't enjoy the woke stuff in the last two seasons - the gay gangsters, the climate change stuff, the general feel of seasons 5 & 6. They should have left it as a story of gangsters doing gangster stuff. Still brilliant though despite all that

Hats off to the beeb in milking a TV series for what was an age when the poor actor/ character died in real life half way through the second series .

I really enjoyed the remake of V, was fairly pee'd off that it was cancelled. 
If Lost had been cancelled the same way as V, it would have been lauded. Instead it ended a complete shambles.
Sons of Anarchy dragged on a fair bit, there's only so many times you can watch the same bike chases ending up in the same industrial estate.
