Any ideas how this happened??

Blackcurrant gin started in September 2019.

Only contents are neat spirit, gin flavouring, blackcurrants and white sugar.
The stuff that had come out at this point was like half-set jelly.
After fishing out the above and pushing through a sieve, it's now like a loose syrup.
Tastes nice, and doesn't taste like a sugar syrup, which is what I was afraid I'd done.

What would cause this? Pectin from the blackcurrants?
Never had it happen before in over 15 years of doing this.

Neat spirit? 100% abv?

If so I think you should have diluted it down with distilled water.

Either way looks like you simply had too much fruit to liquid ratio.

Spirit about 50%, distilled myself in standard 4litre air still.
I've since pushed it through a sieve and then muslin, and added an additional 250 ml of dry gin, and it's back to usual.
Probably too much fruit.., but then, I don't like the commercial ones where you can barely tell that there even IS any fruit...
