I always thought the scene in the Chicago Railway Station in the Untouchables was cool, when the Bookkeeper comes through and the baby in the pram rolls down the stairs.... "got him? .. take him" bang.

Apparently the plan was to dub the sound of gunfire over the scene in post production, but the sound of the blanks echoing around the buildings whilst filming was so good they left it as is.Also the dogfight training in Top Gun

Agree with the Matrix lobby scene too and the station bit in the Untouchables.
I'm going to go for a Western though, and its a toss up between the final duels in For a Few Dollars More and Once Upon a Time in the West for sheer dramatic appeal. Honourable mentions to the climatic scenes in the other two films of the Dollars Trilogy.

Quite a few from one film alone, ‘Point Blank’ from 1967 but I’ll give just two - the scene where Lee Marvin strides down the corridor with the almost psychedelic lighting and his footsteps are amplified, and the one where he bursts in to his wife’s bedroom and empties his gun into the empty bed, which is also repeated in slow motion and in flashback a couple of times.

I read an interview with Andy McNab about Heat. HE consulted on the film and trained the actors to handle the weapons. Apparently Val Kilmer was competitive and got so good at changing magazine that they US used the footage with trainee troops as the gold standard of how to do it. As for film scenes, one of my favourites is Full Metal Jacket, just after the drill Sargent is killed, it goes from dark and sinister straight into "These Boots Are Made For Walking" in downtown Saigon. It's a brilliantly done contrast.
