Just upgraded to 14.5, which has a couple of nice things I like.
You can now unlock your iPhone with your Apple Watch, worth the upgrade for this alone, but also you can choose your default music provider, which is handyl.

Yes, although I have not tested it on Carplay yet, where I really want it to work.
Apparently it will give you the choice menu from time to time in case you want to change your mind.
I could not see anything in settings to change it, you get the option to set it the first time you use it after the update.

I can now sleep soundly at night given Apple have (finally) introduced the woman with beard emoji in iOS 14.5
