I usually wait for the oil pressure to start dropping with the engine at idling speed, I take this as an indication that all is warm enough... Coupled with a temp approaching 70, (on mine, they are all different).

Edited to say that I don't rev past 2000rpm before engine is warm...

Sort off. The less revs the less wear and kinder to the engine. I have an LED that comes on when the water stat is basically fully open which coincides with hot oil. When it goes green, I can go!
The oil pressure drop can be a bit misleading as some engines don't exhibit it.
