I'll always go for the blue cheese option in a restaurant if it's on there, and always when cooking at home.

I would usually have to rely on a block of Stilton from the shop or butcher, but weirdly I usually find I can barely taste it in amongst all the other stuff going on with the burger.

But, I've discovered these slices and they're probably packing the best punch out of any other blue cheese I've tried using:

Anyone else have any blue cheese winning ideas?

(Cue the usual PH judgement)

I used to go for Roquefort on a burger, liberally crumbled over just before you take it off the heat. It melts down but leaves a punchy enough flavour to really add something.

Cool might give that a go then, maybe I was using the wrong blue cheese!

Blackstick Blue always favoured.

Preferably without the burger.

I often go for a posh burger when eating in pub or some such and I do enjoy blue cheese be it Cropwell Bishop or Roquefort, Saint Agur or what not, but I really do think American cheese is best on a cheeseburger. smile

The other gem is Colston Basset blue. No dog content btw.

Again, better with burger delete.

I think that's the brand of Stilton I get from my butcher, certainly the best Stilton I've had, yet still not overly noticeable in the burger.....so perhaps best left on the cheese board.

I prefer blue cheese in a burger too.

My personal favourite is this, from a cheese maker about 5 miles from me:

It's a minced beef sandwich, it's not like it has, or deserves, protected status.

Brioche can still fking do one mind.

This may come as a surprise, but for a burger I most definitely prefer a burger bun.

I kinda feel like the clue is in the name.

Not saying you shouldn't use a sweet crumbly breakfast/dessert loaf for a savory meat sandwich, I just think it's weird. Like topping off a curry with banana.

You can get brioche burger buns wink The Aldi ones are fab. (I shared your view until I tried them).

That's just a very recent and fleeting trend, I can call myself Daisy and start mooing at people but make me a cow, it does not.
Half of the so called brioche buns used for burgers are nothing like a traditional brioche anyway.
Like all fashions, it will pass

To be fair it has been SO long since I used a 'normal' burger bun I have no idea how good/average they are.

I think the last time I used one was an emergency run to the off licence and the buns simply fell apart in your hands.
I'm guessing there are better quality ones to be found.

It's not and it won't.

Places like McDonalds etc worked out decades ago a sweetened bun works really well with a burger.

Brioche is on trend now, mainly because it's delicious.

Places like M&S have launched their 'best ever' burger bun and it's semi-brioch -similar to McDonalds 'standard' bum.

Figured I'd take advantage of it not raining right now and BBQ tonight.

I'm going to try going back to basics, I've shunned my usual brioche bun and gone for a basic Tesco seeded burger bap. I must admit that recently I have noticed the sweetness of a brioche bun and not all together loved it. I'm hoping this return to the classic might be the way forward.

I may or may not also shun the blue cheese, undecided as yet.
