Low insurance run around

In need of some inspiration from you gurus please. I don’t need a car during the week but still want something for nipping to the supermarket and the occasional family visit (120 miles of motorway) every quarter.
Budget is not fixed but ideally up to £8k or so. It can be any size, the only things it must have are quick enough to overtake caravans and tourists (based in Dorset and they block up all the fun roads) and also low insurance because I don’t like the idea of paying for something sat on the drive most of the week unless it’s cheap.
I’ve got a soft spot for the Vauxhall Adam S (I know, I know). I’ve had an Audi S1 before and keen on a tiny zippy car again but don’t want to spend that much again. As you can see I prefer Vauxhall to Ford so the ST is off the menu and I’ve had 2 Minis already so I’m ready for something new. I want to keep this for quite a long time so i don’t want something close to the end of its life or a monster to tax. Thanks in advance!

With £8K I’d be going for a facelifted Corsa VXR over the Adam S without a doubt.
Another option is a Peugeot 208GTI or Abarth 595.
Not enough details to judge on insurance but super mini hot hatches aren’t too bad.
Sorry I did a bit of lurking on auto trader after posting. Looking at insurance up to and around group 15 if that gives a better scale.

Would the Mito start to feel its age on the inside? - I'm not very techy but I'd like something I can hook my phone up to for music fairly easily. I found the bluetooth on my 2012 BMW ProNav a nightmare to connect for example.
I didn't realise the 208 GTi's were so low insurance. I do like the interior having hired a 2008 last year with the 'cockpit'. They seem better value for money than the DS3.
I think my shortlist is between a 208 GTi and an Adam GS/S. I wonder if I'd feel remorseful getting the GTi when I know the PS edition exists...

they're a breeze to use (I have a 230DAB in my CLK63) sensible money & you have all the tech & connectivity you'll need.
The regular GTI is good fun you wouldn't miss the PS version unless you'd driven one, do some quotes & see where you are numbers wise.
You're right the Grand Slam is the S but the GS is better value.
