What am I missing

If you want ‘burger van’ onions for your hotdogs and burgers then do the following:
1) Chop up some white onions and put them into a microwave safe bowl.
2) Put a spoonful of real butter into the bowl and maybe about 1cm of cold tap water into the bottom of the bowl.
3) Cover the bowl with a plate to stop the steam escaping so much, and put it into a microwave on full blast for about 5 mins.
4) Give it stir, then put it back in for a few mins until all the onions are soft and soggy.
5) You will then have a bowl full of those cooked, soggy, slightly buttery tasting ‘hotdog onions’.
If you want to go even further, then you can drain your cooked onions, and empty them onto a large griddle pan, and fry them for a lightly browned look.
I always find they are good after just the microwave.

Yeah what they said, you really have to cook them down. Either in a pan over a low heat or that microwave trick (which I'd never heard before), they should be fully cooked and soft before you think about putting any colour on them.
I used to boil them in a pan, but find the microwave method really quick and easy. I just use a normal bowl with a side plate on top of it as a lid.Blast them for a good 5-7 mins overall and they are well and truly done/soft.
I just use a blob of butter and some water in with them, but some say pouring a bit of oil in there with them works really well.

I used olive oil instead of butter, and didn't brown after microwaving.
