Be sure you know what you’re buying (and what problem you’re trying to solve)

The built in storage is (very) high performance. External USB drives are not.
So, you can plug (pretty much any) USB drive in and it should work with ‘non S/N optimised’ games.
If you want high performance you need the special stuff that is not cheap.
I don’t know if the OS is smart enough to move data that doesn’t need to be on the high performance storage off to external automatically.
I just delete and reinstall stuff as needed.

The Series S only has a 512GB SSD in it (of which about 25% is reserved for the system), so I'm not surprised it's filling up rapidly.
However, to play games optimised/enhanced for the Series S/X you need to have the game installed on either the internal or external SSD. You can however, use an external HDD for storing games you're not playing often, of for games that are not specifically optimised/enhanced.
For optimised/enhanced games you'll need an official expansion SSD which offers the same performance as the internal one - but at a huge cost (e.g. £220 for 1TB).
For storing other games, you can get large external HDDs quite cheaply (relatively), but they won't load games anywhere near as fast as the built in SSD. e.g. an 8TB Seagate powered HDD for £120, or a 4TB in a console-matching white for £85.
