Anyone make thier own sausages?
I used to live near a decent butcher in the UK who made thier own really good sausages, but Dutch sausages are rather different, and much as a like a good braadworst, I miss a nice British banger.
I have a sausage making attachment and mincer for the Kenwood Chef so I'm thinking it's time to start making my own.
It appears I can buy various types of skins online, from "naturally salted hog casings" to dried collagen ones. I've only tried making sausages once years ago and used dried casings that came free with a hand stuffing tool, but I found they split really easily when cooking. Not sure if this is a failing of dried casings or the fact that they were cheap ones. Any recommendations?
Also interested in any recipe recommendations.

Helpful, knowledgeable nice people. Supply the trade and to the public. Supply skins, rusk, spice blends and the equipment. Have used them for about the last 10 years.
No affiliate with the company, just a happy customer. Wish I could say the same about Jaguar and our POS ipace. Don't buy one of them.

Sadly they don't deliver to Europe, which is a shame because some of their mixes sound lovely.. What type of skins do you usually use? I've had a poke around several websites and they all seem to be focused on American and Italian sausages and not yet found any suggestions for a basic British banger.Edited by RizzoTheRat on Friday 16th July 14:13
