At our recently formed cheese club, I presented a lovely Picos de Europa Spanish blue. Now being an amateur cheese club I was wondering if any professional cheese club members could tell me the right way to cut this type cheese on first cut?

One member cut on the red line first, which lead to a heated debate as I am sure you can imagine. Their augment was if you cut the blue line, as I suggested, you end up with half outer rind and no creamy middle. I would have gone for the blue line, however on reflection is the orange correct?

Cut the rind off the side then the blue line, to take the nose of the cheese is really bad form and not done.

I'd scoop from the middle with the edge of my ritz

Blue. Pays to go second though, no?

Take the red liner out and have them shot. Their justification for the red cut of not having much creamy middle seems to allow them to have ALL the creamy middle. No one need that kind of person in their lives. They are bound to park over two parking spaces as well - probably disabled ones.

One does not "nose" the cheese in polite company.

The cheese appears to have already been cut into a portion, quite correctly.
If someone then tried to point the wedge along the red line they would be politely but firmly asked to leave the premises.

Jazoli got it.

I don't know that particular cheese but it depends on whether you can eat the rind, Lancashire Blue, a fantastic creamy blue btw, you can eat the rind, most Stiltons you cannot.

Eat at room temperature

Is it a wedge or a block? If it’s a wedge then the orange (although it’s a bit of big first cut) but if it’s a block then the blue.

Yep.

Nosing the stilton was the first thing I thought of.

Anyone who gets wound up by others cutting the nose off the cheese needs to take great care over thier elbows, cutlery use, napkin etiquette and appropriate dinner table conversation.

Otherwise, they can fk off with their "It's the rules, you philistine" bks.
