What does "card details" meant to you?

Long number and CVV code, or bank account number & sort code?

This, account number and sort code are you bank account details. Your card details change when the card expires but always link to the account.

PAN and CV2.

Sort code and account number are not solely tied to a card and are only shown on the card by a limited number of issuing Banks, whereas the PAN and CV2 only exist and are always present if a card (physical or virtual) has been issued.

I take a few thousand card payments over the phone every year and I always ask for "card details" and I can only think of maybe less than 10 times people have tried to give me bank account number instead in the last 15 years.

the account and the card are different things, as the card is just a means to interact in specific ways with the account. If you give someone your card details they can potentially charge you money. If you give someone your account details, all they can really do is send you money.
