Veggie Christmas Dinner.

Hi all!
I am hosting a Christmas dinner for friends on Saturday and one of the guests is a vegetarian.
I'm not too keen on just plonking a pre-made nut roast on the plate as it feels a bit lazy, but veggie food is not my forte and I'm going to be extremely pushed for time in the kitchen.
Any ideas on a quick, easy but delicious recipe for my guest?
Kicker: I'm also allergic to nuts, so would like to avoid cooking with them if possible

Just give them the same as everyone else but without the meat. Based on the Christmas dinners I've enjoyed over the years there would still be plenty of variety.
I'd be happy with that.
Or make a big thing about your veggie pigs in surprise blankets, where the Linda McCartneys are wrapped in real bacon and keep your mouth shut.

Simple, looks good, (you can leave out the almonds to avoid nut contact) and maybe use the rest for a cauliflower cheese side dish.
