5 year, £50k plan - What cars to add to the list?

My plan for 2022 is to downsize the daily and add a second car to the garage. Kids are grown and are now able to drive themselves so no longer need a large 5 door bus for daily duties and with myself and the other half working from home 99% of the time our mileage has dropped considerably.
Big fan of EV's so will be replacing the current car with an i3s as perfect for us as a daily runabout but looking for something interesting to add alongside it that I can enjoy at weekends and is much better suited to longer trips.
Budget wise I'm looking at a 5 year plan starting with a car £10-15k and then adding another £10k to the budget every year to upgrade. Would rather avoid any kind of finance for the second car hence building up over time. Looking for something genuinely special, preferably V8 or above, relatively comfortable and enough luggage space for a week of touring with 2 people.
So what car would you start with and which cars would you have on your 5 year list (£10k, £20k, £30k, £40k, £50k)? Appreciate this will have to be based on current prices as no way of knowing how prices will change over time.

It all depends on what your idea of special is, for me at this 10-15k price point there are a few V8 options that have a nice bit of specialness about them.
Jaguar 4.2 XKR these are a very good steer with a nigh on bulletproof V8 you won't lose a lot in depreciation (that's true of the rest of the cars) wise:

SLK55 AMG a european musclecar they're fun & with a low bork potential:

Boxster/Cayman a bit too small and lack that "specialness" I'm looking for I think. Size wise the SLK also falls down.
SL I'd probably wait and go for a newer SL63 rather than a risky older SL55. Want to experience the 6.2 V8 at some point also.
On the XKR, I have it on my list but find myself strangely drawn to a late model X100 XKR rather than an early X150. Need to investigate further.

Yes, that's because the X100 looks prettier, in part because the shorter wheelbase leaves more room for the ends to taper. Why is the wheelbase shorter? Because it's an XJS underneath, sharing the same 102" wheelbase - it's the final derivative of a now 50 year old platform.So the X100 is basically a kind of modernised classic, with the limitations and rust issues that brings. Conversely the X150 is a brand new aluminium chassis on a longer wheelbase, and lighter than its predecessor.
You might want a modernised classic, but I think it's worth being aware that the X150 is in no way a facelift or incremental development of the X100, but an all-new, all-alloy car which has far more in common with the still-current F-Type than with its predecessor.
