IMHO it's best to find the limits of your car away from a track day. So Bedford would be great if you can get a car crontrol course there (I don't know if anyone does this though).
Maybe start with looking for someone to provide the training and then see where they do it?

Bedford is definitely a good track to find (and step over) the limits of the car without doing too much damage. It is a bit of a featureless circuit though and the GT does become boring after time. But you'll normally find there are one or two Palmersport instructors around at most trackdays there who will give you training.
