Applying for multiple jobs and navigating multiple offers

I am in the final stages of two job interviews (one final stage interview complete, the other interview in a week). For my prefered job I will likely hear back after the first job offer which I should hear about shortly.
Assuming I get the first offer how do you delay the process to see if you get the prefered job? and reaslistically how long can you delay for?
Last resort, I can always accept and then decline later but that doesn't feel right to me.
I am sure this is common, any advice?

Be honest, its a candidate driven market, tell them you will not make a decision on an offer until you are aware of all your options, then tell the 2nd firm you have an offer on the table and need their decision asap, they may have 2 or 3 at final interview and may not want to plump for you if the remaining candidates haven't caught up in process.
