Dual Monitors from Laptop

Does anyone know if a HP 15-cs0997na laptop would support dual monitors being plugged in?

Should do.

Looking at https://support.hp.com/gb-en/document/c06076331 , for best performance you want one connected with HDMI and one with a USB-C to Displayport cable/adapter.

The Displayport connection is likely to support higher resolutions than the HDMI interface if you've got non identical monitors.

Yes it will do via the DispalyPort interface. You may find it works best with 1 monitor plugged into the HDMI port on the laptop, and then the second into a docking station.
