OP wants an 'interesting' car for 'mainly town driving'...
at 30 mph it's hard to get overly interested in much apart from working a/c and perhaps being ULEZ compliant
That said, nippy and nimble with good viz all help - I would say the 'Up' is the best bet from all the excellent suggestions from the guys above

Small, petrol, interesting and with character.
Toyota IQ. Hilariously small, with an even more hilarious turning circle. 1.33 gives decent MPG, and will do 65mph in 2nd gear, with 4 more to go. Will fit 4 (was our family car for 3 years), can park in places only meant for bikes and feels comfortable on the road.
Still my favourite car I've owned.
I sold my IQ3 1.33 for £4k back in 2014, doesnt seem like they've depreciated at all!
