Week out in Truck - home cooked (re heated) microwave meals

So, recently started a job requiring nights out in the cab four nights a week.
Restricting lunch to a YFood shake, healthy oat/honey bar and banana. I’m doing the 16:8 intermittent fast so have been trying to find a services by 8pm to re heat my meal. Most/all services have a microwave which is fortunate.
I’ve cooked chili and new potatoes and my go to - Thai green curry. Have had the curry for the last fortnight and unsurprisingly getting bored of it. I’ve got about 90 minutes of a Sunday to make enough for 4 evenings (pack in tubs).
I’m a complete novice so my question is, have you any simple ideas on what I can rustle up? Like the idea of a sod off steak or chateaubriand and splitting to at least two evenings. Never cooked steak, only pan fried it.
Pasta etc would be easy but trying to limit/avoid excessive carbs.

How do you do your ablutions on a daily basis?
Is it overnight truck stops with toilet facilities?

I work in the support / emergency sector or our industry, so not in the cabs, but some stories I’ve heard:
- A driver kicked out the bottom of a garden chair (fabric) and placed a couple of carrier bags underneath. You can imagine the rest. Says he got the idea from his lad, who did the same thing at festivals. Don’t forget the wet wipes. Which are apparently multifunctional and good for a wipe down if he didn’t fancy going for a shower…!
- warming food: inverter for microwave / fridge (but be careful, they may drain the battery!)
- cool box for drinks and then bought ice on the road from supermarkets etc….

There was a large large commercial wheely bin in the yard but it had to be removed as some of the drivers returning after an overnighter were using it to deposit 2 litre bottles of strong smelling yellow liquid and polystyrene tubs of brown material if you know what i mean and it was stinking the whole yard out

Why not get yourself a small gas stove to open up a whole new world of options?
The Ridgemonkey pan is a useful bit of kit mainly aimed at fishing fraternity but also widely used in campervans etc, Think it was originally designed for making toasties but now they get used for everything. Have a look on Youtube for plenty of recipe ideas using it.

Also when fishing I make up meals and use a cheap vaccuum sealer to vacpac them, you can then simply reheat them boil in the bag style. Great for spag bol, curry, lasagne, pasta & meatballs, salmon etc
