How to defrost fajitas

I make some amazing Pico de Gallo fajitas (chicken, tomato, coriander, jalapenos, lime juice, sour cream) as a big batch and then freeze a few for later in the week for work.

They are obviously wrapped individually in cling film, and I put them in the fridge overnight to defrost the ones I need the next day.

But when unwrapped they are pretty soggy. Perfectly good to eat but soggy. How can I dry them out when required, we only have a microwave at work.

Should I unwrap them before defrosting in the fridge?

Surely the answer is not to freeze them wrapped.

Freeze the filling separate to the wrap. then use fresh wraps. Microwave the filling to defrost & heat then fill the wraps.

Fajita filling and the wraps should be frozen separately. The water in the filling will separate during the freezing / thawing process and cause a soggy wrap.

A bit too late now, but If you can unwrap them without causing too much damage that’s your best option.

Thanks, but it's a bit of a faff to do that each day when I'd rather just have them completed at the start of the week. No quick way to crisp them up a bit?

If you only have a microwave, nope.

Better a negligible bit of extra work, scooping some onions, peppers, tomatoes, chicken into a wrap, than a soggy wrap any day

You could roll it up and fry it with a little oil to make it like a taquito, or you could stick it in a pan and then cook the outside of the tortilla and fold it over to make it a quesadilla.

couldnt be much easier than a tub of filling and pack of tortillas ? the tortilla's tend to have a long use by date so just plop a spoon full of filling in and go ?
