I've got a 1973 P5B coupe which currently has a early 2000's Sony headunit.

It's wired to one speaker (of a pair) that sit loose on the front parcel shelf. It works, I can chuck a CD full of MP3 files and it will play them flawlessly but I'd rather have something that looks more period. I can also connect my phone (via aux in) and stream music or radio from there.
Whilst at Tatton park this last weekend I picked up an old Motorola 727

that has been converted to negative earth, tested and working for £20. Should I lose the functionality I already have but know that it looks more in keeping with the rest of the vehicle. I'd need to find a better speaker solution than what looks like two old computer speakers from the mid 1990's.
I suppose I could have a bluetooth speaker permanently powered and pair my phone with that, or gut the Motorola and have its internals updated to more modern standards.
I don't want to be cutting holes in trim panels, having massive ICE installs etc, but something better quality that looks of its time whilst still retaining the more modern stuff is my goal.
Any pointers?

Depends on your budget, but lots of options here....

Can you not fit the Motorola in the original 'hole' and retain the Sony somewhere discrete so you get the best of both worlds?
The easiest option is similar to this - put the Motorola in the 'slot' for show, then get a cheap mini head unit off of eBay. They generally come with USB/memory card slots, Bluetooth, and remote controls so can be hidden away as you won't need to access it very often - e.g. https://www.ebay.co.uk/itm/155026837164?mkcid=16&a...Only reason for suggesting that over hiding the Sony is that they are only 62mm deep vs. around 120mm for a CD playing one, so easier to find space for.
Check out what's on offer on ebay too. Lots of cheapy Chinese stuff but might do the trick.
Of course the Rover really deserves a period unit that's been converted to use DAB and has a USB port for playing hundreds of hours of music from a tiny memory stick, but those will be a bit more expensive.

I'd ditch the radio altogether in favour of a nice big exhaust to amplify your V8 soundtrack
. But I've never really seen the point of an entertainment device set into a rattly metal box with poor acoustic qualities, too much reciprocating mass and a dynamic connection to a rough tarmac surface
