After some recommendations on some sausages to make and then smoke. I am looking for stuff more interesting than just Pork or 'Pork and Apple'. I have already done a Turkey, Bacon and Swiss cheese sausage AND a Beef/Pork, Cheddar and Jalapeno one.
I am sure I can make up some recipes but was reading about a Vindaloo one, a Chinese Szechuan pork sausage but what other suggestions are there?
FYI making your own sausage when you have a stand mixer is easy and they taste amazing.

We made some nice rabbit, pork and herb ones a while ago. Needs plenty of pork to stop it being too dry but the rabbit adds nice taste/texture
That sounds interesting.I do a lot of bbq smoking so always keep back the fat I trim off of Brisket and Pork Shoulder so can moisten it easily. I have used Chudds BBQ method on YouTube which are awesome
