Sausage meat kebabs

I've got an abundance of sage and onions and have an idea for making some sausage kebabs by mincing up a mixture as per a lamb kofte. I'm not sure what spices will work in the mixture, I'm thinking of using some garlic and smoked paprika but not sure. Any thoughts or inspiration?
