Sausage meat kebabs

I've got an abundance of sage and onions and have an idea for making some sausage kebabs by mincing up a mixture as per a lamb kofte. I'm not sure what spices will work in the mixture, I'm thinking of using some garlic and smoked paprika but not sure. Any thoughts or inspiration?

Edited to add - sausage would be pork.

I think anything benefits from the addition of smoked paprika and garlic.
