We have similar tastes.
Red Dead Redemption 2 as mentioned above.
Days Gone is free, and I actually enjoyed it a lot more than I expected, to the extent that it's only the 2nd game I've ever got the platinum trophy for (the first one being Wreckfest during the first lockdown
)
Assassin's Creed Origins was an unexpectedly excellent game, I also played a LOT of Assasin's Creed Odyssey (play as the woman to avoid the woeful male voice acting). Origins was better though, better polished, and you could feel the love put in to that game, Odyssey was just more of everything, and whilst still good, didn't feel as complete somehow.

Think I've enjoyed every game I've played on the PS5 so far. In order:
Ratchet & Clank: Rift Apart - came with my bundle from Very.com, really good use of haptic triggers and shows off the capabilities of the solid state drive as you instantaneously warp into another dimension
Deathloop - Really fun mystery fps, you die at the end of each day, you've got to figure out how to break the loop and it doesn't signpost things necessarily, so you start with little knowledge but the more you play the more you figure out what you're supposed to do. A welcome break from traditional find and fetch mechanics, which A LOT of games are guilty of these days
FF7 Remake: I was waiting until I got a PS5 before I played this as games might connect info from previous chapters so I wanted to play it on one console - having loved FF7, the remake was about as good as I could possibly expect. Looking forward to the next chapter. If you're not an RPG or FF fan though, I can see you might not be interested
Skyrim: Yes! Having not played it for probably 7 years, I was listening to the soundtrack whilst working and I had to play it again! Yes it's aged a lot (Find and Fetch mechanics done to death as mentioned above) but atmospherically it's still great. And it is just good fun to play. Glitches and all
GT7: Speaks for itself really. Played to death already
Elden Ring: Barely signposts anything. Tells you the bare essentials. It's the first time I've played a From Software game and for the first ten hours or so....I hated it. Dying over and over again. But, eventually you start to figure some things out. There are also some excellent guides to help you, if you wish. And now I'm really getting into it. Still only low level (32) but taking down a big boss becomes extremely satisfying, much more so than say, anything by Bethesda, where by the time you get to most storyline bosses you've probably levelled your character up so high it's a one shot kill....
So it depends what you're looking for. If you're looking for something that's like what you've previously played I think you've got endless options, some of which are mentioned above. If you want something a bit less linear then I can recommend Deathloop, or if you're feeling brave, Elden Ring. Just don't blame me if you hate it

There are enough good games to not play rinse and repeat stuff. When we read topics about "bored with games" one of the main reasons is people are stuck playing the same old genre and no longer feeling remotely inspired by it all. Ratchet and clank is great as is sackboy adventure as is Kena and of course Demon's Souls and Nioh 2, Hades, Hoa, Road 96 and Ghosts etc. Plenty new experiences.

I've had a PS5 since Feb.
I play Rocket League, Fall Guys and Warzone sometimes. Absolute waste really! There is nothing good imho.
I was having this conversation today, I was ready to upgrade with GT7 coming out then they went to PS4/5 so didn’t upgrade, looking now I can see no PS5 only games that make me want to upgrade. I play Rocket League, Fall Guys and Warzone sometimes. Absolute waste really! There is nothing good imho.
