What to do with 2.8kg of tomatoes?
Discussion
Make some chutney.
Ingredients:
2.8kg of Tomatoes grow on the allotment of various varieties. (Some of the best I’ve ever tasted)
1kg red onion
8 cloves of garlic
A chunk of ginger ( about 8 cm long, 3 cm wide)
500g of dark brown sugar
1 Tsb smoked paprika
4 chilli peppers
350 ml red wine vinegar
Salt
Pepper
4 tsb Worcestershire sauce
Chop up tomatoes, remove any hard cores.
Finely slice onions, garlic and pepper.
Chuck it all in a pot, simmer for 2 hours until reduced, strain into jars.
Retain remaining liquid for a pasta sauce.

Looks great, I tend just to use a glut for roast tomato sauce.
(Half the toms, place in a roasting tray or two (or three...) with some chopped garlic and olive oil and roast for 45 mins/an hour until starting to crisp. Let it cool then shove through a mouli. I use it for pizzas and in place of a tin of tomatoes in recipes.)
