Something between £1.5-3k that will appreciate?

It is always hard to pick any product for 1-3k that will appreciate in value. You may find things that have previously appreciated that MAY appreciate in value but there is no certainty.
Through lock down people were going mad for 2 stroke 125 motorbikes, I saw many, many adverts for bikes saying "prices only going one way" etc….they have gone down in value since then.
If you hear of something going up in value then you have normally missed the boat. There is a saying in investments ‘the sheep get slaughtered’

Whilst I don’t think you can predict these things and I certainly wouldn’t be buying watches just as an investment, there are probably some watches that present a better punt than others if you were so inclined.
Niche and limited run basically. Think Ming or Kurono, perhaps some of the G Shocks. I guess I did alright on paper from my Casquette, but that’s not getting sold.

But first, I would ask yourself what style, colour and size of watch you would actually like to wear. For example, that might be a diver's watch with a blue face of between 40-42mm in case width and no more than 13mm in case depth. Or it might be a bicompax chronograph with a silver dial and no more than 40mm in case width. Or it might be a dressier watch with an interesting but more minimalist dial (you get the idea),
After deciding what kind of watch you would actually like to wear, Then seek out the sort of brands that sell them in those price ranges and take a punt on their future value. At least that way you will own a watch that you like and which might appreciate, rather than just £1500 to £3000 of potential watch investment.
Ming is a very good shout if you like their watches. I would also point you in the direction of limited edition watches from Christopher Ward, and Farer, if you like some of their models. They may not go up much (if at all) but you won't lose much either and you'll have a very well-made watch for the money.
A limited edition Nomos might be another shout. At the top end of your potential budget, I doubt you will go too far wrong with a Tudor Black Bay 58 either, but they are a much more obvious choice if you know what I mean. I think they are nice though and good value for what you get.
At that price, you either need to look at some limited eduction or fashionable g-shocks or, as has been said, a limited edition from nomos or stowa or something. Or maybe a Tudor. However, unless you are extremely lucky with your guesses regarding g-shocks and don’t actually wear your Tudor, you won’t really make anything.
Watches are not a sensible item to invest in. Especially not at the lower end of the market - with the exception again of some of the g-shocks but you are relying on them remaining fashionable. Which they won’t.
Put the cash into ISAs or something, pay off some mortgage or buy a watch to wear they you like. Unless you have the cash to buy something from Rolex, PP, VC, JLC etc where they always go up in retail price by 5-15% a year, you are on a hiding to nothing. There was an insane Rolex bubble during covid. It’s popping now.
Watches are a hobby. Not an investment.

. They might spend £1000 trying to buy a ~£200 watch!Seriously, if I had £1500 to £3000 and wanted to buy something shiny as an investment, I would buy as many of this year's gold bullion sovereign coin that my budget would allow. And then spend the remainder of my budget on a watch I liked.

Alternatively trawl the flea markets, charity shops and car boot sales, see if you can find an automatic watch that someone has mislabelled. It worked for this chap:
