Confidentially with the "price of soup" thread our rather lovely neighbours have just dropped off 2kg of home grown Tomatoes, mostly cherry. They are delicious but there is a limit to how much tomato salad we can eat.

How do we make amazingly tasty cream of tomato soup that the kids will love? It would be good to include basil as we have tonnes of the stuff growing in the garden.

A decade ago I made fresh tomato soup and it was watery and odd tasting. I've never dared try again!

Roast them first ....fry an onion.... use decent stock...... once blitzed sieve it and add cream and season.

Always add a few things (vegetables and stock) - it’s not just pure tomatoes and water. Onion, celery, carrot etc.

Add some finely sliced celery and one potato and carrot , plus a tiny pinch of cayenne pepper to the above suggestions

What he said, but I’ve got a kitchenaid blender and the soup setting on that is amazing. This is ph, so the expensive option of sieving is required

Use the spec I posted on the other thread substituting 1.5kg of toms for the puree reducing the stock to the consistency you prefer. It's an industry standard and just needs seasonsing after you blitz and pass.

One pan wonders by Jamie Oliver, available on All4, has a recipe for tomato fritters that I like the look of if you fancy something other than soup.

If it's a tinned Heinz type taste you're after you'll need to make a gastrique (sugar and vinegar) to add to it.

I have a Lakeland soup maker - the top range one that I got at an auction brand new for peanuts

It is brilliant ! There are a few soup maker books on Amazon that really suit it

Off the top of my head, roughly
1 tin toms
1 medium potato diced
1veg stock cube
1teaspoon paprika
pepper
(optional bit of sugar)

simmer til potato soft.
Whiz it all up with a stick blender
add a bit of cream

May need a bit of tweaking but that'll get you close to "tin of tomato soup"

By all means jazz it up with a bit of basil if you want it to taste posh.

My wife makes a fantastic Delia Smith recipe with roast tomatoes, basil oil, and homemade croutons. Not sure if she got it online or in one of her books.

I thought you ideally needed a plum tomato like Roma for soup and cooking rather than cherry / salad varieties.
