What cars would be in your "car cave"?
Discussion
So, there a lot of automotive YouTube videos out there looking at people's car collections/"car caves". These vary significantly from AutoAlex's fleet of 7 cheap old cars right up to Schmee's modern "supercar" collection. There are also some very eclectic collections in between such as Harry Metcalfe's or Gordon Murray's collections or if you watch Jonny Smith's "The Late Brake Show", some more "themed" collections celebrating one person's obsession with a particular car/marque.
So, if you had the means and a suitable barn/warehouse to house a collection of for argument's sake 7-15 cars, what would be in your "car cave"? Would it be an eclectic collection or would it have a "theme"? Would it be modern or classic cars or a mix? These don't have to be vehicles for daily use, so you could still have daily vehicles outside of the collection and have them as pieces of art/history or for occasional use.
Being a child of the 80s, I find the supercars (Testarossa/Countach/911 Turbo) and hot hatches (205 GTi/Golf GTi/R5 GTT) of the 80s and early 90s very iconic but the hot hatches probably don't offer enough variety and I don't know whether I would drive the supercars much or not. I also love the BMW M cars, AMG Mercedes and RS Audis of the 2000s but again there's possibly a bit too much overlap there to justify a collection.
For me, my "hero" cars all have a motorsport connection. Not too bothered about having the limited number special editions, just tidy examples that I could drive and enjoy. I'd have a modern EV and a Defender 110/Discovery for daily/family duties and a nice example of each of the following to rotate for daily use in the summer.
Original Mini Cooper S
Lancia Fulvia HF
mk1 Lotus Cortina
E30 BMW M3
Mercedes-Benz 190E 2.3/2.5-16
Ford Sierra RS Cosworth 3dr
Ur Audi quattro
Lancia Delta Integrale Evo
Ford Escort RS Cosworth
Subaru Impreza P1
Mitsubishi Evo VI
MST mk1
Toyota Yaris GR
Quite a nice mix of FWD/RWD/AWD, turbo/NA, different eras and manufacturers, so I don't think I would tire of that fleet. The "theme" could also be extended to more obscure cars. Skylines, Group B cars etc.

I was thinking about this the other day and decided the idea of multiple car ownership wasn't for me, even with a ridiculous amount of money I don't think it'd be my thing. The PIA of having to store, maintain, service, MOT, insure and tax any more than say 3 or 4 cars just doesn't appeal.
Much rather just change cars more often instead of collecting them. Buy something, drive the hell out of it for a year or two to get the full experience and then move it on for my next want.

E46 M3
E30 M3
964 turbo / RS
992 GT3 RS
Ferrari F40
Ferrari 812
Audi ur Quattro
Audi B5 RS4
McLaren F1
Mercedes Pagoda
Mercedes 600 Grosser
R34 GTR or other Jap car, because you have to really
Sierra Cosworth
Bentley Blower c1930
Pagani / Koenigsegg something or other
And possibly a couple others to make up the 15. If the opportunity ever arose to get such a collection then maybe I’d swap some in and out to reduce overlap.
That said, looking at OPs list - a Merc 190E Evo II and some kind of crazy OEM Evo would be contenders for sure.
G63 for daily duties and possibly something less ostentatious for running about in, debadged RS6 on steelies

Am I budget limited?!?!
I’d have all the stuff I loved as a kid:
R34 GTR
Escort cosworth
Subaru P1
Evo 8
Then more modern stuff I’ve taken shining to:
E46 M3 CSL
Ferrari 360cs and 458 speciale
Aston DBS (2009 vintage)
Lamborghini Aventador
R8 V10
Porsche GT3 touring
Rolls phantom
And if we’re talking stratospheric budget:
A Chiron and a 250 GTO
But if limitless it would be an Amazon size warehouse rivalling the car choice on gran turismo!

Nice question
I'd start with slightly better versions of the cars I already have, because I know I like them, so:
1. E63s estate (the new 4wd one)
2. E46 M3 convertible
3. A less battered and rusty Mk1 TT, maybe the 240 QS but I'd be fine with a good 225.
Then I've liked the idea of something around my age for a while, so either /both of:
4. Reliant Scimitar (manual with overdrive, mostly so I can have a car with "OVERDRIVE" on the back)
5. E23 7 series
Then I'd like something small, quick and lightweight, but I don't know of any light 2-door sports cars that I'd fit in well enough, but let's say there's options for modifying them in this fantasy, and something fairly sporty that just looks and sounds awesome (which might also need stretching out):
6. Alpine/ Lotus
7. V8 F-Type
Probably a big comfy 4x4 just to tick the box, and some proper mad lifted offroad thing:
8. ML/GL/GLE63 would edge the BMW or Audi alternatives on looks for me.
9. Jacked up Toyota or similar
I've never had any real desire for high end supercar-type stuff, and I don't really pay enough attention to them to sensibly pick something, but I suspect if I'd tried some I might change my mind so let's say some kind of Lambo for now and see how we get on.
10. Aventador (first name that popped into my head)
11. And an NSX, and I really couldn't tell you why
And a couple of oddities, just because, might absolutely hate them, mostly just like the idea
12. Audi S1
13. Citroën DS
14. V8 Mustang (the modern one)
15. Mitsubishi 3000GT
I'm clearly not a proper petrolhead, not a single Porsche, Ferrari or Mclaren in there.

Mk1 Cooper S - had one already but would love another.
Aston Martin DBS V8 - the William Towns original.
Alfa Romeo 2600 Sprint Zagato - partly because it's an Alfa and partly to tick the Zagato box.
Lancia Fulvia Coupe - smallish, elegant and great to drive.
Lamborghini Espada - a Series 2 with the nicer dash but keeping the Miura style Campagnolo alloys of the S1.
Lamborghini Urraco P300 - one of Gandini's best designs and so well packaged for a mid engined 2+2.
Maserati 3500GT - cheaper than an Aston DB4 and just as handsome.
Maserati Indy - practical, handsome with a touch of glamour, definitely an alternative 'shopping car'.
Maserati QPV - a pre facelift 2007 / 08 car with the ZF 'box as a daily driver.
Ferrari Dino 246GT - the prettiest thing to come from Maranello.
Ferrari Dino 308GT4 - unloved and underrated perhaps, but a nice comparison to the Urraco, the first prototype of which the GT4 was based on.
Iso Lele - American muscle wrapped up in a Gandini / Bertone bodyshell
De Tomaso Mangusta - American Muscle wrapped up in a Ghia / Giugiaro bodyshell
Monteverdi 375 - American muscle wrapped up in svelte Swiss bodyshell.
Citroen SM - a slice of the future from 1970.
The workshop / storage space they all share would be suitably decorated with period decor, posters, etc

I’d be fulfilling my childhood desires with the following:
Renault 5 GTT
205 GTI
Astra GTE
Nova SR
Mk3 Fiesta xr2i
Mk4 Escort RS Turbo
Clio Williams
All rubbish by todays standards… but I feel these caves really lend themselves to nostalgia.
Daily would be a Range Rover and 911 etc… but a cave.. that’s where I go to remember the good old days.

I would have a good mix a car for most occasions:
Daily:
Merc E 63s (fast estate dog car)
Range Rover Velar (for the wife)
Alfa Gulia Quad - when we don't have the dog
Road trip cars:
Alfa 8c
Ferrari F12
Aston V12 vantage (old shape)
Track day cars:
BMW m2 comp
Alpine a110
Merc C class black series
Curios:
Best road going rally car I could find
Gumpert Apollo
Noble m600
Resto mod (probably classic merc or alfa)
Project 7 or 8 got to have the 5.0l engine
This will change daily of course, all I need now is the 2 million

Perhaps , but the cars which predated them by 35 years or so were , in relative terms, far , far cruder , slower , thirstier and more dangerous than your group . Until recently I'd argue also that our curent cars are utter crap compared to this from the future . Renault 5 GTT
