Inbetween car - options please

Looking at a 12-18 month wait on my new car order via work's salary sacrifice scheme.
My X5M is currently giving me 18mpg and I plan to sell it shortly and get an inbetween car to cover the next 12 months.
I have 2 options, up to £20k outright purchase or use 5.1% APR from bank to look at a PCP deal - but this would limit the car to be only up to 3yrs old (2019 onwards).
Requirements are:
- Value retention, something that will lose me as little as possible given it is an interim car
- Modern interior tech, something that is a nice place to be inside
- Reliable, don't want to be spending signficant money on upkeep
- Family car, 2+2 with some space needed
- Good economy - given the current car that would be around 35+ mpg
Desirables are:
- Something with warranty, stress free driving
- Fun to drive and not slow
