Rear Bilstein Eibach too soft
Discussion
After years sitting on Gaz Golds, I've acquired a set of used, good condition Bilstein Shocks & Eibach Springs. My problem is the rears are bottoming out. The original spring rates are no longer visible on the springs, I'm assuming they are standard 275's. Is there a preferred supplier who could help me figure out what spring rates I should be swapping them for, or anyone here who has solved this problem.
The fronts appear to be fine so I'm hoping to be able to just uprate the rears

Is it possible you have the dampers / springs the wrong way round? Especially if the springs have been refurbed / powdercoated in a different colour.
These are mine on a '96 Chimaera after I refurbed them in 2017. The earlier front dampers have the same size top eyes as the rear dampers (I bought better used front dampers that were later models with larger top eyes). The front damper is slightly shorter than the rear:

Yes, but that wouldn't cause the rear to bottom out. The fronts are stiffer than the rears. I once accidentally did this with an early set of GGs, the front sitting on rear springs almost fully compressed the springs and the rear on fronts was rock hardAs they are obviously to soft or tired springs Swap for the GGP on the rears which will allow you to take springs of the Billies and check if the damping is working uniformly on both shocks before buying or uprating the springs. Similar to your GGP if you wind the damping off the shocks / springs feel soft. I’d check damping resistance before proceeding unless you are happy they are working ok. I suppose a rear push down test on the car can confirm this to some extent.
