Scandinavian breakfast

I briefly lived off and on in various Scandinavian countries about 20 years ago, and loved the breakfasts.

So, starting with black bread, and adding cheese (but which cheese?) and ham (smoked or not?) cherry tomatoes, pepper and a bit of salt, what would you add? Little gem lettuce and good butter? Some red pepper?

Don’t drink coffee, so would be washed down with fruit juice and a hot chocolate.

Help me replicate what I once loved!

(personally, I thought the drink was disgusting)

Could add some cold smoked reindeer, that was bloody good.
